Shanam had cooking duty on the first night and made us an amazing salmon and ginger vegetable dish. It was delicious! The second night I made us veggie pizza quesadillas. Pretty great menu for our first camping trip :)
You have to roast marshmellows camping. You just have to :) Even if it is over your lantern due to fire restrictions! It worked out pretty well!

Oh on the note of NM, have you ever been to Carlsbad Caverns? I have been really wanting to get out there sometime and see them.
